INGREDIENTS
  • 4 sheets aluminum foil
  • 1 pound raw Alaskan scallops
  • 3 cups cooked orzo pasta
  • 1 (13.75-ounce) can artichoke hearts, drained and quartered
  • 2 cups cherry tomato halves
  • 2 teaspoons minced garlic
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt, or to taste
  • 1/8 teaspoon freshly ground pepper, or to taste
  • 3 tablespoons chopped fresh dill, or 1 tablespoon dried dill weed
  • 1 (4-ounce) package crumbled feta cheese
INSTRUCTIONS
1. PREHEAT oven to 450°F or grill to medium-high.
2. COMBINE Alaska scallops, orzo, artichoke hearts, tomatoes, garlic, lemon juice, olive oil, salt, pepper and dill.
3. CENTER one-fourth of mixture on each sheet of foil.
4. BRING up foil sides. Double fold top and ends to seal packet, leaving room for heat
circulation inside. Repeat to make four packets.
5. BAKE 14 to 18 minutes on a cookie sheet in oven OR
6. GRILL 9 to 11 minutes in covered grill. Sprinkle with feta cheese before serving. This delicious seafood pasta recipe is ready to serve 4 . Nice !

INGREDIENTS
  • 4 (12x18-inches each) sheets aluminum foil
  • 2/3 cup uncooked couscous
  • 1/4 cup sliced green onion
  • 1 teaspoon ground coriander
  • 3/4 teaspoon paprika
  • 1/4 teaspoon hot pepper sauce
  • 1/2 cup sliced almonds
  • 1/2 cup currants
  • 1 (10.5-ounce) can double strength chicken broth, divided use
  • 4 (4 to 6-ounce) Alaska cod, pollock, sole/flounder or halibut fillets*,, thawed if necessary
  • 2 tablespoons melted butter or margarine
  • 1 lemon, thinly sliced
  • 2 tablespoons chopped fresh parsley

INSTRUCTIONS
1. PREHEAT oven to 450°F or grill to medium-high. Spray foil with nonstick cooking spray; set aside. Combine next 7 ingredients. Stir in half of chicken broth.
2. CENTER one-fourth of the mixture on each sheet of foil. Top with Alaska seafood fillet, butter and lemon slices.
3. BRING up foil sides. Double fold top and one end of packet. Through open end, add one-
fourth of remaining broth. Double fold remaining end to seal packet, leaving room
for heat circulation inside. Repeat to make four packets.
4. BAKE 20 to 25 minutes on a cookie sheet in oven OR
5. GRILL 8 to 10 minutes in covered grill. Sprinkle with parsley before serving. This great seafood pasta is ready to serve 4. Enjoy !

Creamy Pesto Shrimp










Another nice seafood pasta recipe to try....pesto shrimp....great !

INGREDIENTS

* 1 pound linguine pasta
* 1/2 cup butter
* 2 cups heavy cream
* 1/2 teaspoon ground black pepper
* 1 cup grated Parmesan cheese
* 1/3 cup pesto
* 1 pound large shrimp, peeled and deveined


DIRECTIONS

1. Bring a large pot of lightly salted water to a boil. Add linguine pasta, and cook for 8 to 10 minutes, or until al dente; drain.
2. In a large skillet, melt the butter over medium heat. Stir in cream, and season with pepper. Cook 6 to 8 minutes, stirring constantly.
3. Stir Parmesan cheese into cream sauce, stirring until thoroughly mixed. Blend in the pesto, and cook for 3 to 5 minutes, until thickened.
4. Stir in the shrimp, and cook until they turn pink, about 5 minutes. Serve over the hot linguine...hmm...nice one for feasts and parties !

INGREDIENTS

* 1 (8 ounce) package linguini pasta
* 2 tablespoons butter
* 1/2 pound fresh mushrooms, sliced
* 1/2 cup butter
* 2 cloves garlic, minced
* 1 (3 ounce) package cream cheese
* 2 tablespoons chopped fresh parsley
* 3/4 teaspoon dried basil
* 2/3 cup boiling water
* 1/2 pound cooked shrimp

INSTRUCTIONS

1. Bring a large pot of lightly salted water to a boil. Add linguini, and cook until tender, about 7 minutes. Drain.
2. Meanwhile, heat 2 tablespoons butter in a large skillet over medium-high heat. Add mushrooms; cook and stir until tender. Transfer to a plate.
3. In the same pan, melt 1/2 cup butter with the minced garlic. Stir in the cream cheese, breaking it up with a spoon as it melts. Stir in the parsley and basil. Simmer for 5 minutes. Mix in boiling water until sauce is smooth. Stir in cooked shrimp and mushrooms, and heat through.
4. Toss linguini with shrimp sauce, and serve...delicious seafood pasta recipe is ready. ..hmmm...amazing taste! Enjoy it !

Seafood Scallops Pasta

Pasta with Scallops... a must try seafood pasta recipe !

INGREDIENTS
  • 1 lb (450g) spaghetti
  • 2 tbspn olive oil
  • 2 garlic cloves - peeled and crushed
  • 1 large onion - peeled and chopped finely
  • 1 can 14 oz (400g) peeled plum tomatoes - chopped
  • 1 glass white wine (optional)
  • 2 tspn dried basil
  • 1 lb (450g) prepared scallops - sliced in half crossways
INSTRUCTIONS
Heat half the oil in a frying pan, add the garlic and fry gently until softened. Add the scallops and cook for about 3 minutes. Remove the scallops with a slotted spoon and set to one side.
Add the rest of the oil and onions and cook until the onion issoftened. Add the can of tomatoes, white wine and basil and simmer for about15 minutes until thickened. Cook the spaghetti according to the instructions on the packet. Add the scallops to the tomato sauce, heat through and serve immediately with lots of fresh parmesan...the seafood pasta scallops is ready...a nice and amazing taste of pasta !

INGREDIENTS
  • 4 tbspns (1/4 cup) Olive oil
  • 1 chopped onion
  • 2 cloves of garlic, peeled and crushed
  • 1 400g tin chopped, peeled plum tomatoes
  • 1/2 tspn dried basil, or about 12 fresh leaves chopped
  • salt and pepper to taste
  • 12 oz (300g)(2 cups) peeled prawns (shelled shrimps)
  • 1/4 pt (150ml) (2/3 cup) white wine (drink the rest!)
  • 2 tbspns freshly chopped parsley
  • 1lb (450g) fettucini
INSTRUCTIONS
Put the oil in a pan and when it's hot, fry the onion and garlic until softened - do not brown.
Add the tomatoes and let the sauce simmer gently for about 5 minutes.
Add the white wine and cook a further five minutes. Add the prawns and cook gently for about 5 minutes - taste and add salt and pepper if required.
Cook the fettucini according to the packet instructions.Drain and put on plates, adding the sauce on top. Serve with freshly grated parmesan and a twist of black pepper.For the 12 oz of prawns, you could substitute either one of or a mixture of crab meat, tuna fish, smoked haddock, fresh salmon, seafood cocktail (cockles, whelks, mussels) ...great combination for seafood pasta. Its ready to serve...nice one..! Enjoy the pasta !

INGREDIENTS

* 1 (14 ounce) package deluxe macaroni and cheese dinner mix
* 1 (10.75 ounce) can condensed cream of mushroom soup, undiluted
* 1/2 cup milk
* 1 (6 ounce) can skinless boneless salmon, drained
* 1 tablespoon grated onion
* 1/2 cup shredded Cheddar cheese
* 1/2 cup dry bread crumbs
* 2 tablespoons butter or margarine, cubed

DIRECTIONS

1. Prepare macaroni and cheese according to package directions. Stir in the soup, milk, salmon, onion and cheddar cheese. Transfer to a greased 1-1/2-qt. baking dish. Sprinkle with bread crumbs; dot with butter.
2. Bake, uncovered, at 375 degrees for 30 minutes or until heated through. The seafood pasta salmon macaroni is at your service...nice and great taste ! Enjoy it !

* 1 teaspoon crushed red pepper flakes
* 1 (14 ounce) can quartered artichoke hearts, drained
* 1/2 cup sliced black olives
* 1/4 cup lemon juice
* 1/8 teaspoon salt
* 1/2 cup grated Parmesan cheese


DIRECTIONS

1. Bring a large pot of lightly salted water to a boil. Add linguine, and cook until tender, about 8 minutes. Drain.
2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the shrimp, garlic and red pepper flakes; cook and stir until garlic is lightly browned and shrimp is hot, about 5 minutes.
